Originally called string beans, they no longer have a string to be removed in preparation. Usually available fresh, they can be found frozen or canned.

Choosing

Choose green beans that are bright green, slender, and free of blemishes.

Storage

Store tightly wrapped in a plastic bag in the refrigerator for up to five days.

Cooking

Green beans are best cooked through simmering or steaming until just tender.

Nutrition

Green beans are high in potassium, calcium, and phosphorous, with a fair amount of vitamin A.
