Fennel
About
Fennel’s bulb has a flavor similar to anise, only sweeter and lighter. The stalks aren’t usually eaten, but add delicious flavor to stocks.
Choosing
Ideally, the bulbs should have no browning and be crisp. Those with stalks intact will have more flavor.
Storage
Stored tightly wrapped in plastic in the refrigerator, it should keep two weeks.
Cooking
Eat raw or cooked; it makes a great addition to roasted vegetables and meat. Blanch or steam slightly before sautéing or roasting.
Nutrition
The bulbous part is used and is a good source of vitamin A and potassium.
