Buying Oysters
Buy only live oysters. To determine if an oyster is alive, tap the shell. It should close upon being tapped or already be tightly closed. The flesh inside should be moist, not dry, and have a salt-water smell. It usually has a tan-like color, though the color can vary. However, if the color is pink and the smell is off, throw it away.
