Breakfast Quesadilla - 1 serving

  • 1 Appleton Maple-Flavored Sausage Patty
  • 1/2 Appleton Hot-N-Spicy Sausage Patty
  • 1 oz Mama Cozzi sliced pepperoni (6 slices)
  • 2 tbsp sweet onions, diced
  • 1 slice Monterey Jack cheese
  • 1 8 inch flour tortilla
  • 1/2 cup Fit & Active egg substitute

Sauté sausage and pepperoni in an 8 inch non-stick skillet for 2 minutes. Add onion and sauté until onions are translucent. Pour just enough egg substitute to coat the bottom of the pan and cover with a lid for 40 seconds, or until eggs are set.

Flip the 'egg pancake' and cook other side for 20 seconds. In the meantime, place a slice of cheese across one flour tortilla (you may have to slice cheese in half to cover half tortilla). Slide the 'egg pancake' onto tortilla and fold in half. Return quesadilla to pan and fry on one side until crisp, then flip and crisp other side.

Tips:

- Be careful not to use too much egg. One whole egg may be too much, which is why I suggest egg substitute.

- Any cheese will do, I just prefer the Co-Jack.

- I make all sorts of quesadillas in this manner, this is just my favorite. My wife likes them with turkey bacon and spinach and/or mushrooms. Just be careful to not add too many ingredients or you won't be able to fold the tortilla. Have fun experimenting!
