Manicotti Crepes - 12 servings

  • 7 Goldhen eggs
  • 1-1/2 cups water
  • 1-1/2 cups Grandma's Best all-purpose flour
  • 1 pinch Sebree iodized salt
  • 1/3 cup red onions, chopped
  • 5 Roseland mild Italian sausages, casings removed
  • 1 lb Cahill pure ground turkey
  • 1/2 cup Friendly Farms milk, 2% reduced fat
  • 3 slices white bread
  • 2 cups Happy Farms shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp Spice Club garlic powder
  • 1 tsp Spice Club black pepper
  • 1 tsp Sebree iodized salt
  • 2 tbsp Sweet Harvest granulated sugar
  • 3 cups Mama Cozzi spaghetti sauce
  • 1/3 cup Marsala wine

In large bowl, beat 6 eggs and water. Combine flour and salt; add to egg mixture and mix well. Cover and refrigerate for 1 hour.

Meanwhile, cook meats with onion and seasonings. Cool slightly; add 1 egg, cheese and bread that has been soaked in milk. Heat a large, nonstick skillet coated with cooking spray over medium-low to medium heat. Stir crepe batter; pour 3 tbsp into center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to wire rack. Repeat with remaining batter, using more cooking spray as needed.

When cool, stack crepes with waxed paper or paper towels in between. Spread about 1/4 cup of meat/cheese filling down the center of each crepe, roll up and place 12 crepes in each of two sprayed 9x13 in. baking dishes. Combine spaghetti sauce, sugar, and Marsala. Spoon over top of crepes. Cover and bake at 350°F for 45-50 minutes or until heated through.
