Easy Enchilada Casserole - 4 servings

  • 1 lb Granger Ground Beef, 80% lean
  • 1 can Chef's Cupboard cream of mushroom condensed soup
  • 1 can Chef's Cupboard cream of chicken condensed soup
  • 2 cups enchilada sauce
  • 1 can green chili, chopped
  • 3/4 lb Clancy's Corn Chips
  • 2 cups Happy Farms shredded Colby & Monterey Jack cheese

Preheat oven to 350°F. Brown ground beef until no longer pink; drain. In skillet with beef, add next four ingredients. Heat thoroughly.

In 13x9 in., pour layer of corn chips (about 3/4 of the bag). Pour combined ingredients evenly over the corn chips.Top with cheese. Bake until cheese is melted.
