Lemon Baked Chicken - 4 servings

  • 4 boneless chicken breasts
  • 1 lemon
  • 2 tbsp fresh basil, or 3 Tbsp dried basil
  • 1 tsp salt and pepper

Place chicken breasts in a shallow baking dish that has been sprayed with cooking spray; leave room between each breast. Juice the lemon and pour over the chicken. If using fresh basil, chop and sprinkle, or just put one whole leaf on each breast. If using dried, sprinkle over the breasts. Add salt and pepper.

Bake at 375°F for about 20 minutes. Remove and check the center. If needed, bake an additional 10 minutes.
