Chicken, Lamb or Beef Curry - 2 servings

- 1-1/2 tomato
- 1 tsp Spice Club minced garlic
- 2 onions
- 2 tsp Indian spice mixture for meat dishes
- 1 lb chicken pieces, or lamb or beef
Dry chicken, lamb, or beef. Fry garlic and onions in butter till golden brown. Mash the tomatoes and add with the spice mix and let it cook for another 4-5 minutes. Add the meat (in pieces) and cover the pan. Let it simmer. Stir occasionally to avoid burning. A little water may be added if needed; it will evaporate by the time the curry is done. Add salt to taste.
Just before serving, add a little lemon juice. You may even try your favorite brandy or cognac instead of the lemon juice.
The same recipe may be used for other meats. Take care to use the appropriate spice mix.
This dish makes an excellent stuffing for omelets, pancakes, and sandwiches when made with minced meat.
