Mushroom Burger Bake - 5 servings

  • 2 tbsp Happy Farms sweet cream butter, salted
  • 1 onion
  • 2 cups Happy Harvest mushrooms, stems & pieces
  • 1 lb Granger Ground Beef, 90% lean
  • 1/4 cup Briargate spicy brown mustard
  • 1 Goldhen egg
  • 1/4 cup Chef's Cupboard plain bread crumbs
  • 2 cups Happy Farms shredded mozzarella cheese

Dice the onion and fry in butter with mushrooms. Blend the ground beef, mustard, egg, breadcrumbs, salt and pepper in a bowl. Spread meat mixture in a rectangular baking dish (the meat should be about 1 in. deep). Top with the fried onions and mushrooms. Bake at 400°F for 30 to 40 minutes. Top with shredded cheese and return to oven for about 5 minutes or until melted.

Note: Meat substitutions may be used; try ground turkey or add different spices. I use fresh mushrooms, but canned will save time when it comes to chopping & cleaning.
