Elodia Salad - 10 servings

  • 1 peeled, seeded cucumber, chopped
  • 1 large tomato, chopped
  • 1 medium onion, pealed and chopped
  • 3 limes
  • 1/2 bunch cilantro, chopped
  • 6 oz Sea Queen crab mates
  • 13 oz Casa Mamita tortilla chips, rounds

In a large salad bowl add the following ingredients. Peel and seed cucumber and tomato. Chop into same size pieces as you will chop the onion and crab mates meat. Remember, you will scoop with corn chips! Chop cilantro and squeeze in the juice from the limes. Toss and let sit for a couple of hours or overnight if possible. Serve with tortilla chips or as a salad.

My son hates every ingredient listed except for the chips...but he will eat tons of this salad. Can be used as a meal, snack, or appetizer.
