Eggplant Pizzettes - 4 servings

  • Kwik N Fresh aluminum foil
  • can Ariel nonstick cooking spray
  • 1-1/2 lb eggplant
  • 1/4 cup Carlini olive oil
  • 1/3 cup sun dried tomatoes
  • 1/4 cup Briargate Kansas City original barbeque sauce
  • 3 tbsp balsamic vinegar
  • 8 slices Happy Farms Provolone cheese
  • 1/4 cup red onions, chopped
  • 1/4 cup Southern Grove pecan halves, finely chopped

Preheat your broiler. Line a baking sheet with aluminum foil and spray with Ariel cooking spray. Stir together tomatoes, barbecue sauce, and vinegar in a micro-wave save container. Partially cover and microwave on high for one minute, stirring at the 30 second mark.

Slice the eggplant into .5 in. thick circles. Brush oil one both sides of each slice and arrange these in a single layer on the baking sheet.

Broil 6 in. from the heat for 5 to 7 minutes, or until pieces start to brown. Flip eggplant pieces and broil the second side for an additional 5 to 7 minutes. Test with a fork; you want the eggplant soft, but not mushy!

Mix the tomatoes, barbecue sauce and vinegar and spread a bit on each eggplant slice. Tear the slices of cheese and place some on each portion of eggplant. Sprinkle the diced onions over the cheese and top with pecans.

Broil for an additional 3 to 5 minutes until the cheese softens and and starts to melt.
