Taco Casserole - 8 servings

- 1 lb 80/20 Ground Beef
- 1 medium onion
- 1 package Spice Club taco seasoning mix
- 2 cups tomato sauce
- 1 can Happy Harvest whole kernel corn, drained
- 2 cups Happy Farms sharp cheddar cheese
- 2 cups biscuit mix
- 2 Goldhen eggs
- 1 cup Friendly Farms milk, 2% reduced fat
- 1-1/2 cups Friendly Farms light sour cream
- 2 tomatoes, chopped
- 2 cups shredded lettuce
Heat oven to 325°F. Grease 13x9 in. baking pan.
Cook ground beef and onion in large skillet, stirring frequently until beef is brown; drain. Stir in dry seasoning mix, tomato sauce and corn. Spoon into baking pan and sprinkle with cheese. Stir biscuit mix, milk and eggs until smooth. Pour over beef mixture.
Bake about 35 minutes or until knife inserted in center comes out clean. Cool 10 minutes before cutting.
Top it like a taco with the shredded lettuce, chopped tomatoes and sour cream. To make it extra-special, add sliced ripe olives, guacamole and something spicy (such as chopped jalapeño chilies or crushed red pepper).
