Tomato Soup with Spaetzel - 4 servings

  • 1 tsp Carlini olive oil
  • 1/8 tsp sesame oil
  • 1/2 cup onion, chopped
  • 1/2 tsp Spice Club minced garlic
  • 1 tsp Spice Club ground oregano
  • 1 tsp Spice Club Crushed Basil Leaves
  • 1 can Happy Harvest Diced Tomatoes
  • 1-1/2 cups water
  • 1/4 tsp Sebree iodized salt
  • 1/4 tsp Spice Club black pepper
  • 2 Goldhen eggs
  • 1 cup Grandma's Best Flour
  • 1/2 cup water

Heat the olive and sesame oil in a saucepan over moderate heat. Add onion, garlic, oregano and basil and sauté for about five minutes, or until onion is soft. Add remaining ingredients, bring to a boil, reduce heat and simmer.

While that's heating, mix the two eggs, flour and the second measure of water together until well combined. Drop the dough by spoonfuls into the soup. Simmer for 15 minutes.
